It was in 1907 that Professor Ikeda began his experiments to identify the source of this distinctive taste. He knew it was present in the “broth” made from kelp (a type of seaweed, kombu) a traditional ingredient in Japanese cuisine. Assuming a huge amount of kelp broth, Dr. Ikeda managed to extract the crystals of glutamic acid, an amino acid and a building block of proteins. Professor Ikeda found that the glutamate had a characteristic taste other than sweet, sour, bitter and salty, and he called this taste ‘umami’.
